I've heard of people who make pineapple vinegar (well, it starts out as wine, of course) from the otherwise-discarded shells of pineapples, but now it's actually being bottled and sold in stores:

Just picked this up the other day and haven't really tried it, yet, but it should be interesting. Like most locally made vinegars, it is condimentado ("condimented" - that is, containing added spices). Oddly enough, the label on this 16-ounce bottle actually tells not just WHAT is in it, but HOW MUCH:
  • Natural pineapple vinegar standardised to 5% acidity
  • Garlic: 2.5 g
  • Sugar: 4.5 g
  • Salt: 7 g
  • Onion: 11 g
  • Cumin: 0.7 g
  • Black pepper: 0.9 g
  • Bay leaf: 0.9 g
Because of what's already in it, it may not need much else (other than oil) to be good on a salad. Shall have to see what other uses I can find.
If blueberry muffins have blueberries in them, what do vegan muffins have?

I bet that is going to be really good. I'd like to try it on a salad topped with grilled shrimp.

I'll have to keep my eyes open. That looks like fun. I have coconut and sugar cane vinegars. They are fun to use, especially in SE Asian and Latin foods.
You only live once . . . but if you do it right once should be enough!
