We are going to Houston Sunday for Janes reguler tests at MD Anderson. We are going early for a stage performence of "Showboat" at 2:00 pm--then back to the hospital/hotel bar for drinks and bar food and as much of the super bowl as we want--is this a great hospital or not?!! Test are thru Tues AM--expect no problems!!

I didn't read all the posts, so this may have been answered... but why cant you put the dip and little crudités in individual cups (plastic) for individual servings? or find a clever way to serve the hummus and guacamole in edible serving sizes:

Someplace on here is an amazing corn salad - we've done it for lots of occasions (including a wedding) and it was a hit. For that we put it in those "scoops" corn chips. It's a cold dish and so easy. Now that I've reminded myself I need to make it again.
You only live once . . . but if you do it right once should be enough!

Oh, don't know if it's the same salad, but I have a great corn salad that would go well with Chili! Where is it.....

Here are two that we love - haven't made either for a couple years.

FIRE-ROASTED CORN SALAD
8 servings

3 limes -- juice of
2 tsps grd. cumin
1 tsp mild chili powder
6 fl ozs EVO -- plus more for brushing
Coarse salt & freshly grd. pepper
6 ears corn -- shucked
18 ozs cherry tomatoes -- halved
2 ozs diced red onion
3/4 oz chopped fresh cilantro
1/4 lb. feta cheese -- diced (1/4 to 1/3)
2 tsps cumin seeds -- toasted & lightly crushed

Whisk together the lime juice, grd. cumin, & chili powder. Stream in the EVO to make a vinaigrette. Season w/s&p.

Prepare grill to med-high heat. Brush a little EVO on each ear. Grill, turning the ears often so that they cook evenly, till lightly charred, ~10 min.

Cut kernels off cob. Put the kernels in a large bowl.
Add the tomatoes, onion, cilantro, feta, & the vinaigrette & toss to coat.

Transfer salad to platter & sprinkle with the cumin seeds.
Serve at once. (this will hold before sprinkling with cumin seeds for a couple of hours.)

9/21/04 - served with Chipotle Baby Back Ribs - Barberra was very good wine with the entrée

NOTES : This is a wonderful summer salad!


SWEET CORN COBLETS
Noni Parker, friend and neighbor and great cook!

6 med. ears of corn, cut into 3/4" thick rounds
3/4 cup distilled white vinegar
1 cup finely chopped onion
2-3 T. sugar
2 oz. jar chopped pimentos, drained
1 tsp each: mustard seeds and crushed red pepper
1/2 tsp. salt

In a 6-8 qt. pan, bring 4 qts. water to a boil over high heat.
Add corn; cover and cook till hot (2-3 minutes).
Drain & arrange in a 9X13" dish or rimmed serving platter.

In the same pan, combine vinegar, onion, sugar, pimentos, mustard seeds, red pepper, and salt.
Bring to a boil over high heat and cook till sugar is dissolved.
Pour over corn; let stand till cool, spooning mixture over corn frequently.
If made ahead, cover and refrigerate for up to 6 hours.
Serve at room temp. 8-10 servings (no, I think about 4-6, these little devils are addictive!)

Those sound good Jean. Although the 2nd one is very similar to a Martha Stewart pickled corn that resulted in me needing stitches in my finger and Bob insisting I should be restricted from sharp implements.

I pulled up an RV forum (rv.net)this morning and someone was looking for the corn salad I mentioned.

Corn Salad

2 cans whole kernal corn (I used the same amount of thawed frozen corn.
2 c. shredded cheddar cheese
1 c. mayonnaise
1/2 c. chopped red onion
1 c. chopped red and green bell peppers combined
Salt & pepper to taste
1 10 oz. bag Frito's ™ Chile Cheese Chips.

Combine corn, cheese, mayo, peppers and onions. Season to taste with salt & pepper.

Just prior to serving crush the bag of chips slightly and top the salad with them.

For the wedding we just put spoonfulls of the salad in "scoops" chips instead of the chips on top. I think we put chile powder in the salad for that one.

I forgot to say "Good luck Bill and Jane!" and have fun!
