Toffee Bananas
Makes 4 servings
Ingredients:
- 1/2 Cup Self-rising flour (or 1/2 cup of all-purpose flour plus 3/4 teaspoon of baking powder and 1/4 teaspoon of salt)
- 1/4 Cup Cornstarch, plus extra for dusting
- 1/4 Cup cold water
- 1 Teaspoon Vegetable oil, plus more for deep-frying
- 2 Bananas, thickly sliced diagonally
- 2/3 Cup Sugar
- Black and white sesame seeds, for sprinkling
- Ice-cream, to serve
- Whisk together the flour and cornstarch.
- Add the water.
- Mix until smooth.
- Stir in vegetable oil.
- Fill a wok or deep-fryer one-third full of vegetable oil.
- Heat oil to 375F.
- Lightly coat the banana slices with extra cornstarch.
- Using a bamboo skewer (just as a utensil – not to for serving), dip a banana slice into the batter.
- Transfer to the oil.
- Repeat with more banana slices, but don't overcrowd the fryer.
- Deep fry until golden and crisp
- Drain on paper towel.
- Repeat with remaining bananas in batches.
- Place the sugar in a large, heavy-bottomed pan over medium heat.
- Cook, shaking the pan occasionally, until a golden-brown caramel forms.
- Remove from the heat.
- Working quickly place a fried bananas into the caramel.
- Turn to coat.
- Drop into a large bowl of ice water to set the caramel.
- Drain immediately.
- Repeat with remaining bananas, one at a time.
- Sprinkle with black and white sesame seeds.
- Serve with ice-cream.
