Okay, So About Coating Chocolate Treats....

Jean's evil post about making Almond Joys brought up a Q with me - how does the industry totally coat something with chocolate and not leave "a trail" of non-coating?

In school (the only place I ever worked with chocolate), we diped items with a fork and rested on a wire rack over parchment paper. But, I did lick the parchment paper...
