Many of you may not find this fun, but we love charcuterie type dinners!! And, today was so much fun. I'm posting all our pictures and I know I'll bore the h*ll out of some of you but, maybe someone else will find this as much fun as we do.

Wine: Tobin James Ballistic, 2009

Only 'recipes' I followed were:

1. tossed l/o steak slices with olive oil and just sauteed til warm.

2. Combine (the amounts I used)
1/4 cup mayo
1/4 cup crumbled Gorgonzola
1/2 T. white vinegar
1 clove garlic, pressed
1/2 tsp. dry mustard

3. Toss together:
chopped tomato
chives and basil

4. rub 1/2 avocade with lime juice

5. have some great sourdough bread and toast it.

Well, heck here's the recipe from noblepig.com - I made about a 1/4 of a recipe and I have leftovers for small pizzas tomorrow.

Steakhouse Bruschetta

24 slices baguette
extra-virgin olive oil
2 garlic cloves, halved
2 Tbs butter
1 lb leftover steak, cubed with any visible fat removed (rib-eye is the best)
1 cup mayonnaise
1 cup crumbled Gorgonzola
2 Tbs white vinegar
2 cloves garlic, pressed
1 tsp dry mustard
1 cup chopped vine-ripened tomatoes, seeded
1/4 cup chopped fresh chives
1/4 cup chopped fresh basil
2 avocados, cubed
lime juice
1/2 tsp coarsely ground black pepper

1. Preheat oven to 400 degrees F. Brush each baguette slice with olive oil. Place in the oven for 5-7 minutes or until golden brown. Remove from oven and let cool a few minutes before rubbing each slice with cut garlic.

2. Heat a nonstick skillet over medium heat. Add butter and warm meat through. Season with salt and pepper if necessary.

3. Combine mayo, Gorgonzola, white vinegar, garlic and dry mustard in a medium bowl. In another bowl, toss tomatoes together with chives and basil. Squeeze lime juice over avocados to keep them from turning brown.

4. Spread mayo mixture on toasted bread and top with steak, tomato mixture and avocados. Serve immediately.

Also, yesterday I made a Fig sauce that is so good -
I made the entire recipe and will freeze a lot of it. For today, I just added a little water to about 1/3 cup to thin it a tad so it was spreading consistency.

Fig Sauce

2 C Dried figs -- sulfur free, stems removed and quartered
3/4 C The Olive Grove's Cinnamon Pear Balsamic Vinegar
1 teaspoon Sugar
1 T Butter
1 Pinch Salt & Sugar
1 medium Yellow onion -- halved and thinly sliced and caramelized
3/4 C Water (white wine would work as well)

In a small skillet, caramelize onion with butter and pinch of salt and sugar. In a quart sauce pan, put in all ingredients and bring to a simmer for 15 to 18 minutes or until figs rehydrate. Remove from heat and allow sauce to cool to room temperature. After cooling, puree with emersion blender or in a food processor until smooth and blended.

Transfer sauce to an air tight container and store in the refrigerator. The sauce thickens as it cools. If the sauce is too thick, thin with a tablespoon of water or white wine, or more to reach the consistency needed.

Uses:
Sauce for ham, pork or chicken
Sandwich spread
Sauce base for pizza

***Kern shared his sauce with The Olive Grove and put it on a Panini sandwich for us, and we all about fell over. You know that uncontrollable feeling you get when you can't stop eating something, and if it's in your sight you'll eat the entire thing? This sauce on his Panini did that to all of us! For your holiday entertaining, I highly recommend this sauce on your main dish. It won't disappoint.

Oh my, that does look like fun! Ron would be all over that! Thanks for the pics and recipes. I would love that fig sauce. Just won't tell him what's in it.
