Just to be weird, I decided to have this for lunch, today:

Instead of a grilled-cheese sandwich with tomato soup, it's a grilled tomato sandwich with cheese soup.

Not spectacular, but still very tasty. I made the soup from a roux, milk, American and cheddar cheeses and chicken broth with mirepoix puréed into it. Next, I made the sandwich from buttered slices of multi-grain bread with a layer of fresh basil leaves on the first slice of bread, then slices of Roma tomatoes, then more fresh basil. Finally, I garnished the soup with basil chiffonade and a bit of grated cheddar. Of course, I did dunk the sandwich into the soup.
If blueberry muffins have blueberries in them, what do vegan muffins have?

I don't think that is weird at all, but then I eat all kinds of veggie sandwiches. One of my favorite is lightly salted sliced radishes on buttered bread. Yum.

Cheese soup sounds yummy. I also like to make a grilled cheese and put slices of tomatoes on it.

It sounds and looks really great. I don't care for tomato soup anyway... I love grilled veggie sammies. Nice job!
