Here's the recipe for the mushrooms -

Citrus Marinated Mushrooms
Recipe from Joie Warner’s Mexican Meals book

1 lb. medium mushrooms, stems removed
1 cup olive oil
Grated zest of 1 medium orange
Grated zest of 1 medium lemon
1/2 cup fresh orange juice
1/2 cup fresh lemon juice
2 large garlic cloves, very finely chopped
2 tsps. salt
2 tsps. mustard seed
2 tsps. dried oregano
2 T. finely chopped cilantro leaves
1/2 tsp. cayenne
1/2 tsp. freshly ground black pepper

Place mushrooms, oil, orange and lemon zest, and orange and lemon juice in nonreactive saucepan over high heat; bring just to a boil and remove from heat.

Transfer mixture to glass jar or bowl, and stir in garlic, salt, mustard seed, oregano, cilantro, cayenne, and pepper.

Allow to cool completely, then cover and refrigerate, stirring occasionally, for at least 24 hours before serving. Drain mushrooms and serve. Serves 4 (?)

Hold on to the marinade, it’s delicious. I’m tossing it with pasta for dinner today.

Glad it went [relatively] well.

Definitely need to see if I can get some mushrooms soon. Fortunately, I HAVE seen them in a couple of stores recently.
If blueberry muffins have blueberries in them, what do vegan muffins have?

Everything looks wonderful Jean.

I can't wait to get "home". My masa grinder is in the trailer and I have a big bag of dent corn (dried hominy). I need to replenish my chiles too.
You only live once . . . but if you do it right once should be enough!

Thanks for the recipe Jean! But I'm still trying to wrap my head around mushrooms in orange and lemon with garlic. Never thought of pairing mushrooms with citrus.

Just double-checking:

Since all the other herb/spice measurements are two teaspoons, is the cilantro correct at two tablespoons, or is that supposed to be two teaspoons, as well?
If blueberry muffins have blueberries in them, what do vegan muffins have?

This was an early work of Joie Warner and she didn't write recipes too well. 2 T. is correct for the cilantro.

(guess I should rewrite for future......)
