Masa Harina - Does this stuff go bad?

I made my Tex-mex lasagna last night and made my own tortillas.

Something about the tortillas just wasn't quite right. I think the Masa Harina was bad. I had used it before, does this stuff have a short shelf life?

It gave the entire lasagna a terrible flavor. Pretty much could only eat the filling. It was just weird.

Going to have to toss this whole thing out!

Masa harina can go rancid. You can usually tell by smell. I buy it in small quantities and keep in a sealed container in a cool place or freeze it. It's not terribly expensive - if it smells rancid I toss it.
You only live once . . . but if you do it right once should be enough!

I keep all those grains in the freezer 'cause I so seldom use them.

Keep it air tight, keep it cool, but, yes, it will still go rancid.
Practice safe lunch. Use a condiment.

It can also pick up flavours and odours from the freezer.
If blueberry muffins have blueberries in them, what do vegan muffins have?
