Another beautiful day in the PNW! Today I'm going to make the grilled achiote shrimp from the new issue; Mexican rice also.

We got some beautiful pork chops yesterday, I've got some corn on the cob to grill. I'm still contemplating everything else.

We're headed to California tomorrow, so tonight was about not having leftovers. We had Reuben sandwiches and baby carrots and spent most of dinner planning our hike from the base of Horsetail Falls (just off of Hwy 50) into Fallen Leaf Lake.

It's been YS's dream hike for years, so this trip we're going to do it! I'm already sore just thinking about it, LOL!!

Please be careful Karyn. I swear, EVERY TIME I turn on the news there is either a hiking rescue or a water rescue in CA. It's unbelievable actually.

Hope you have a great trip, Karyn! But do be careful!

After a few lazy cooking days, I finally did the salmon! LOL! I figured out a way to combine deck time with cooking it. A few minutes inside to start the rice and prepare the rub and glaze for the salmon and the dressing for the spinach, I turned the cooking over to William. We cooked and glazed it on the grill! YUM!
