Cis, thanks so much for posting this-- it sounds wonderful!

Maryann, "light" coconut milk is simply regular coconut milk with an equal amount of water. I buy the regular stuff and freeze any extra in ice cube trays, then when I thaw it, I just add an equal amount of water (and a dash of coconut extract, too!).

Surprised that Aldi wouldn't have it.

Can you get fresh coconut flesh or whole coconuts anywhere? The milk is just the grated coconut processed with some hot water (which can include the coconut's own water). Not sure how well it would work with dried coconut.
If blueberry muffins have blueberries in them, what do vegan muffins have?

Trader Joe's sells canned light coconut milk. 99 cents. Half of what it is at any other store.
