We are hoping to have family dinner at Holly's to celebrate Ron's birthday, as long as everyone is feeling okay today.
Not sure what the girls are making just yet. They were tossing around the idea of going out instead of cooking as it's a busier than normal time for both of them.

We're having
Taco Enchiladas with COrnmeal Crepes. I'm serving them with a jicama slaw. This was on the menu for last week, but never got made. It seems to be a trend around here!

Doing ravioli in a meatball sauce with meatballs (for Hubby) and sausage for moi. Arugula salad with that Shallot-Lemon Vinaigrette that Hubby has come to love.

Peas are simmering away. The sausage will go in shortly. We'll have rice to go with. Can't wait! This is one of those meals that reminds me of my daddy. Bittersweet!

They were good, but really needed the salsa and sour cream. Without those, they were pretty dry. I really enjoyed the cornmeal crepes as a different kind of wrapper.
