Ran across this from closetcooking blog - and, I hope I can wait for summer tomatoes to make!! Doesn't this just say summer??

Tomato and Feta Dip

A quick, easy and tasty Greek themed dip featuring fresh tomatoes and feta that will disappear faster than you can make it!

For the pita chips:
4 Greek style pitas, cut into wedges
1 Tbs oil
salt and pepper to taste

For the tomato and feta dip:
2 Tbs olive oil
4 roma tomatoes, seeded and diced
4 oz feta, crumbled
salt pepper and oregano to taste
4 green onions, sliced
2 Tbs lemon juice (~ 1/2 lemon) or red wine vinegar

1. For the pita chips:

2. Brush or spray the pita wedges with oil on both sides and bake in a preheated 400F oven until crispy and golden brown, about 3-5 minutes per side.

3. For the tomato and feta dip:

4. Spread the olive oil out on a large platter, sprinkle on the tomatoes followed by the feta, salt, pepper and oregano, green onions and lemon juice.

5. Optionally mix everything up and enjoy!

6. Option: Use fresh bread like a baguette instead of pita chips.

7. Option: Add extras like kalamata olives, sundried tomatoes, roasted red peppers, etc

8. Option: Top with a Greek yogurt drizzle.

Yield: Servings: 4

Sure does sound like summer, but I'm not waiting that long. We've been getting great Roma tomatoes. I'm making this today!

I have been buying some beautiful, large heirloom tomatoes at the grocery store. I don't know where they are grown but they are delicious.

I agree! No matter which variety I buy, winter tomatoes taste like cardboard. But this recipe is going in my file to try with the first Arkansas tomatoes in... July... *whine*

That does look amazing. I just refuse to buy cardboard tomatoes this time of year. I did get a few Romas the other day (I'm sure they're from Mexico) that weren't too bad, but prices were crazy.
You only live once . . . but if you do it right once should be enough!
