What's on the menu for everyone today??

Chicken thighs - either grilled or boned and made into chicken patties which I need a picture of. Mango rice, also.

I have a whole chicken thawed. That's as far as I got. Will be in a board meeting till after lunch so will ponder dinner so I don't fall asleep

Denise, are you still using your rotisserie? We use ours a lot in the winter.

We are having spaghetti and meatballs tonight. Heather and James left for Las Vegas last night, so Holly and I are taking turns babysitting Alyssa and Tommy. This is something I know they will both eat, especially since "T" likes to help me in the kitchen more than Alyssa does.

Still trying to picture spaghetti and meatballs on the rotisserie. Is it kind of like using a fork to twirl it?
If blueberry muffins have blueberries in them, what do vegan muffins have?

Labs, I like that "mental picture"!!

We probably won't get back to the farm until 5, then unhooking and pushing the trailer into the garage and unloading the car... looks like I'll be checking the freezer to see what is in there.

well, here is what might be a surprise from Leftover Queenie.... not one stinkin' black bean in the house - canned or dried! So, no salsa

So back to the drawing board for a side with the chix -

Started dumping -
a pkg. of frozen rice
frozen peas
toasted mixed nuts
l/o kidney beans
candied jalapenos
and for moistening, I had enough roasted garlic salad dressing for one salad ( - I hate beating up Roy to get what I want) so mixed it up.

Wow, what a great flavor!!! Now, if it is as good after it's heated, we are on to something good. And, I may keep out a little for a 'cold rice salad' just for kicks.

Guess I'll be stocking up on black beans soon - but, of course they are one of my always staples, so don't know how I ran out!!
