Ask and ye shall receive - if you're not a purist and will use canned products, here is one idea for you.

From: Black Beans & Corn, pg. 71

Chicken Chowder

For a fast, healthy, and delicious dinner this chowder just can't be beat.

1 1/2 cups low-fat milk
1 cup chicken stock or broth (see The Pantry)
1 can cream of potato soup
1 can cream of chicken soup
2 cups cooked chicken, cubed (see The Pantry)
1/2 cup scallions, chopped
11 oz. can whole kernel corn with red & green peppers, drain and rinse
1 cup frozen peas
1 cup mushrooms, sliced
4 oz. can chopped green chiles
1 cup (4 oz.) shredded cheese (Cheddar or Swiss or your choice)

In a saucepan, combine milk, broth, potato, and chicken soups; blend well.

Add chicken, scallions, corn, red & green peppers, mushrooms and green chilies and mix well.

Bring just to a boil, reduce the heat and cook over medium-low heat, just simmering, 7-9 min. or until vegetables are softened; stirring occasionally.

Remove from heat; add the cheese and stir until melted. 8 servings.

Looks very good Jean! I'm normally not a fan of "cream of" soups but sure looks and sounds good here. Thank you.
