I have invited a number of friends for an afternoon tea party and am now wondering what would be the most efficient way to make those fussy little tea sandwiches. I can get "thin" sandwich bread in the store, which is really not as thin as I would like it. Is there anyone who can give me a few tips, such as: should I freeze the bread before cutting it?, to butter or not? If not, how do I get to layer a slice of cheese, a slice of apple and a small amount of fig to stay put? Any hints specific or general would be appreciated. Thanks.

how about using cream cheese and instead of using bread, try a cracker.
