I have made the 8 layer lasagne and the chiken lasagne a dozen times. they are great. I was wondering if you are able to freeze the lasagne? If so when would I freeze it? Would the fresh mozzarella still be good?

Lasagne can be frozen after it's been baked. I've not tried those recipes but it should still be okay to freeze them, after baking and cooling. Cover with plastic wrap and then foil, to protect mozzarella from freezer burn.
ps don't forget to remove plastic wrap before reheating (teehee)

Lasagne is one of those wonderful magical dishes that freezes so well. Cooked or uncooked.

FREEZING LASAGNA

Lasagna is great to have on hand in the freezer---perfect for easy weeknight dinner. Just tightly wrap UNBAKED lasgan in twp layers of foil, then freeze. Bake straight from the freezer (unthawed and uncovered) at 375 degrees for 1-1 1/2 hours. Check the temp with an instant read thermometer (180-200).

I have done this on several occasions and it works beautifully!!!!
