My son-in-law, James, made these last weekend to serve with a smoked brisket. They were really delicious. I might leave out the green bell pepper, but will use some jalapeno. And, I would probably not use 6 slices of bacon, maybe 2 or 3 at the most.
Smoked Bourbon Baked Beans
6 strips thick cut hickory smoked bacon, cubed or chunked
2 medium onions, chopped
1 green bell pepper, chopped
1 jalapeño or more or less to your taste, chopped. (seeding is optional)
1 53 oz. can plain pork and beans
1 15 oz. can red kidney beans
1 can great northern beans
½ cup ketchup
¼ cup Kentucky Bourbon or Tennessee Whiskey
4 T. molasses
2 T. honey
2 tsp. dry mustard
¼ tsp. pepper
1. Put beans in smoker uncovered and cook for at least 3 hours at 230°.
Tips
FishinChik says: "I took them to 175° to get the thickness I like, using a blend of cherry and oak pellets."
