OMG! Dare I ask how much a lb? I've got a 15lb belly in the freezer - enough for 10lbs of bacon a 5lbs to braise. I just saw a place that confits pork belly in bacon fat . . . then dredges slabs (slices) in rice flour and deep fries it.
You only live once . . . but if you do it right once should be enough!

Trixxee, pork bellys (bellies???) are so fun to work with -

I was going to post a few ideas, but I have so many dishes/appetizers that I wouldn't know where to start!!

Wow! I can get it from a butcher 25 miles away. $8.00 lb. One farmer's market is only $7.50 lb. You did great!!
