I made it a long time ago and now I'm trying to find the recipe I used (I liked it) - and can't figure out which one I used.

Anyone have a favorite - Tried and true only, please.

The one I used for my pork "Wellington" was excellent. It’s Francis Mallmann's recipe, and he IS from Argentina, so it's hard to beat.

Remember, though, that it's supposed to be made the day before you use it, so plan ahead.

I keep some in the fridge, so it's at the ready.
If blueberry muffins have blueberries in them, what do vegan muffins have?

This is a Cuisine recipe that is really good.

CHIMICHURRI
(MAKES ABOUT 3/4 CUP)
WORK TIME: 10 MINUTES

MINCE IN FOOD PROCESSOR:
4–5 cloves garlic
1/2 t. crushed red pepper flakes

ADD; PROCESS UNTIL SMOOTH:
2 bunches fresh curly parsley,
including stems
1/2 cup fresh oregano leaves
4–6 T. light olive oil
4–6 T. white wine vinegar
4–6 T. fresh lime juice
Salt to taste

1 In a food processor fitted
with a steel blade,
process the garlic and red
pepper flakes until garlic is minced. Add the herbs
and process until also minced. Scrape down the sides
of the bowl and add remaining ingredients

2 Process sauce until
smooth and thick add additional oil, lime juice, or
water for thinning (if needed)Serve, or cover and chill.

Had some good-sized mushrooms in the fridge and needed to use them, so I chopped up the stems and sautéed them in butter with some onions, then spooned that mixture back into the caps, spooned some chimichurri on top of that and covered that with some grated Parmigiano Reggiano, then baked it all up to make some stuffed mushrooms. YUM!

sounds good!! I've also seen cilantro added.

A friend on facebook made a pizza using -
caramelized onions and fennel
mushrooms
hot peppers
hot capicola
3 cheeses

He used chimchurri for a sauce and just loved it!!

Sorry I've been AWOL! I'm still in the first few weeks of school, which means taking care of new students and their parents, so I've been super busy.

My absolute favorite chimichurri is Ted Allen's Roasted Jalapeno Chimichurri. The roasted jalapeno isn't traditional, but we absolutely love it and use it for all sorts of things. Pizza sounds like a great idea that I haven't tried yet!

Chimichurri on beef is my favorite, but now I'll have to try it on pizza. That sounds delicious. I add red jalapeño to my chimichurri recipe
