This a variation on the caprese salad kabobs in Vol. 56.
Place 1 cup tomato juice, 1/2 cup vodka, 1 Tbls. of pesto, and hot sauce to taste in a blender and blend until smooth. Work with everything cold. Place one small cube of mozzarella and 1/2 cherry tomato in each of 6 shot glasses. Pour the vodka mixture in the glass to cover. Serve on a bed of ice.

I found a Caprese Panini recipe and tried it the other day. Good stuff if anyone wants the recipe.

1 tablespoon olive oil
3/4 cup tomato -- diced
1 tablespoon capers -- drained
1 pinch red pepper flakes
1/2 teaspoon balsamic vinegar
4 slices white or wheat sourdough bread -- 1/2" thick
olive oil
1/4 cup pesto sauce
6 ounces fresh mozzarella -- thinly sliced
sea salt and freshly ground black pepper -- to taste
Heat oil in a nonstick skillet over medium-high heat. Add tomatoes, capers, and pepper flakes; sauté until just starting to break down, about 3 minutes.
Off heat, add vinegar.
Brush oil on one side of each slice of bread; spread the other sides with 1 Tbs pesto. Arange mozzarella and tomato mixture on two slices of bread, then sprinkle with salt and pepper. Top with another slice of bread, oiled side up.
Toast sandwiches on both sides.
