What's on the menu for everyone??

I brought so many leftovers home last night that my dinner plans have been pushed back a couple days!!
Retired and having fun writing cookbooks, tasting wine and sharing recipes with all my friends.

Grilling some swordfish - thinking of making a citrusy compound butter to top it with.

Broccolini and and probably some type of rice pilaf on the side.

The past 2 dinners have been leftovers from our party last Saturday, and tonight we're going out with friends. I think that we've gone out to dinner more in the last 2 months than we did at the farm in a year! Alas, my jeans aare getting a tad snug.

I've got some boring dinner ideas, so I came on here for inspiration. I guess I'll add something fishy to the list? But still undecided.

I am feeling ambitious today.

Sichuan Braised Pork Cheeks with rice & broccoli. A rare treat . . . Lemon Cornmeal Cake with Lemon Glaze & Crushed Blueberry Sauce.

Bob is going to love it - dessert two days in a row! Yesterday was Lemon Brownies. I seem to have a lot of lemons - we are making Limoncello. I can't wait till that's ready.
You only live once . . . but if you do it right once should be enough!

That dinner sounds delicious Sharon. Dessert too!

I planned on coconut chicken tenders w/ pepper jelly, we'll see.

We're having l/o Deva's Chili and cornbread. Sooo good.

Jean these are beyond simple - and terribly addictive. Best to go ahead and double the recipe. I don't bother with the glaze. I made this with my Canadian flour and get to eat them too.

Lemon Brownies

3/4 C flour
3/4 C sugar
1/4 t salt
1 stick butter, soft
2 eggs
juice from 1/2 lemon (about 1T)
zest from 1/2 lemon (about 1t)
Combine the flour, sugar and salt in a large bowl. Mix in the softened butter.
In another bowl whisk the eggs with the lemon juice and zest. Add to the larger bowl and mix well.
Pour into prepared 8X8 brownie pan.
Bake at 350 for 25 minutes.
You can double the recipe and bake in a
9X13 pan for 30 minutes.
Remove and let cool, then glaze.
Glaze
1/2C powdered sugar
1 T lemon juice
additional lemon zest
stir together
You only live once . . . but if you do it right once should be enough!
