What's on the menu for everyone today??

A friend gave me a pint of his preserved lemons so I'm going with Moroccan Roasted chicken (only I'm using turkey wings). A recipe I found in my M.C, from 7 years ago!!



Anyone have T&T ideas for more of the preserved lemons??

I think it's Tuesday, Jean.

I am making some pasta e fagioli soup and some of that decadent Pioneer Woman olive cheese bread with it.

It is suppose to clear up and get warmer here this afternoon so hoping to grill the rib-eye steaks tonight. Will make a Caesar salad to go with, and might make those parmesan potatoes in the muffin cups again. Those were really tasty.

I won't bore you with the entire recipe, but just look at these ingredients for a rub/marinade and imagine how wonderful my kitchen is smelling!!!!

1 whole chicken -- about 4 pounds
1/2 preserved lemon*
3 tablespoons olive oil
5 cloves garlic
1 teaspoon ground cumin
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon cayenne pepper
above is the rub
--------
1 small onion -- chopped roughly
1 carrot -- peeled and chopped roughly
1 cinnamon stick
1 tablespoon granulated sugar
4 cups boiling water
1 bottle pomegranate juice -- (16-ounce)
1 tablespoon fresh mint -- chopped

This should be made into a candle!!!

That sounds like a winner Jean.

From issue #38 I'm making the pineapple spiced chicken with asparagus. Maybe jasmine rice.
