Used Oil Storage?

Last night I made the best Chicken Kiev ever! Hubby took pics but they were all out of focus. Anyway, I had to flash fry the chicken in oil for about two minutes. After I let the oil cool down, I strained it and put it back into its container because it can be used again.

My question is, do I refrigerate the oil or can it go back into the pantry at room temp?

I always refrigerate mine because of not really knowing any better. Good question for Jean.

Yes! Refrigerate!! and what a treasure trove of flavored oil for you to have on hand.
