I think it's going to be the chile colorado burritos tonight. I put the ham hock meat and juice in the freezer for a cooler day.

So, I did make the chile colorado burritos today, using the IP recipe which is basically enchilada sauce with beef bouillon. It was good and we would like to have it again, but the flavor just wasn't there for me.
Changes I would make for next time:
Use a chuck roast, brown it well and braise it in the sauce using Daphne's recipe.

We just got in and not much in the house but now I'm craving pasta after seeing Jean's! I do have some linguine and canned clams.....

One of the perks! It truly is nice to be there every day. But I miss cooking and lazy mornings.
Forgot to say, I also LOVE having daily access to great grocery shopping opportunities!
And dinner is corn dogs and fresh fruit from the deli salad bar.
