What's on the menu for everyone today??
Have no idea here, but probably something out of the freezer. Supposed to be another warm day up here.

Doing a butterflied chicken over potatoes with corn on the side. Yeah, I have to heat the oven to 500 degrees, but with the 1500 CFM motor in the exhaust, heat gets moved out quickly.
Can't sous vide the corn because I have no room on top of the stove to do it. And on top of the stove is the only place I'll do sous vide.

Kind of a Rube Goldberg "Sweet Corn Tostada" here... or a bastardized version. I wanted everything done before it got too hot.
Made tortilla bowls and layererd -
smooshed black beans (w/garlic, cilantrol, lime juice, olive oil - heated)
l/o napa cabbage tossed with hard-cooked egg
sautéed corn and onion
cherry tomatoes
cheddar cheese
taco sauce.
It was so good, I held back enough to repeat again tomorrow's dinner.
