Monday's Dinner - 10/24/16??
What's on the menu for everyone today??
After this weekend with this new forum I think I'll just drink all day......
Latest problem is not being offered font selection (Bold, Underlined, etc.) and size when I start a new thread.
Retired and having fun writing cookbooks, tasting wine and sharing recipes with all my friends.

Oh, I love that Trixxee. My daughter made it for us one time and I was just thinking about it again!
Tonight we are having the Caprese Burger that was our review dinner a while back. We just love that one. Salad on the side.

Well, since drinking wine all day wasn't my greatest idea lately, I'm going with the French bread topping thing. I have 2 Creole corn patties left, so I'll squish up and top the bread half, a few jalapenos and a sprinkling of Fontina cheese and broil the whole thing up. With a salad or fruit platter, this is the easiest and tastiest meal lately.

I'm sorry I wasn't able to help, Jean.
We had seabass tacos for lunch, so we stopped and picked a ready made sandwich for me and a chicken tender plate for him. I'll probably only eat half, but Andrew is always hungry.
Trixxee, thanks for the dinner ideas. I could fix chili and the Olive Garden Soup on seperate nights this week and have it for dinner the next night. My problem is cooking and being able to eat at a decent hour. But with cooler temperatures coming in, I can make soups, stews, chilis and roasts and have them the next day.

You are so right Daphne, it's that time of year; soups, stews and chilies. I made a big pot of chili con carne yesterday, four 1 quart containers in the freezer now for future eatin.
Tonight I'm making Beef tip Stroganoff with Horseradish Sour Cream, Dilled Jasmine Rice and Asparagus.

I actually know what I'm making for tomorrow, tonight. Best friend has made this a couple of times now. My challenge tomorrow is to find bone in chicken breasts that are not gigantic (can't stand them). If I have to, I will swing by the local mexican market who still sells 3 1/2 poundish whole chickens.

We are going to have a corned beef that Ron brought home. Easy peasy in the instant pot and it turns out fantastic! When it's done, I'll keep it warm and add the potatoes and carrots to the pot. They only take a few minutes. Yum.
