Well, Maryann and Trixxee, we all seem to be on a similar wavelength. Since William isn't crazy about ribs, I compromised and got a whole cut up chicken to grill and slather with lots of Sweet Baby Ray BBQ sauce. I made baked beans and corn on the cob for sides.

Sunday night dinner. Chicken Enchilada Stuffed Acorn Squash. OMG!! This was so good. I just happened to have leftover roast chicken. Recipe from Food Network Magazine.

I have the recipe in a Food Network Magazine, also found it online - or I can type it in. Bob ate all of his and a third of mine.
The leftover chicken & enchilada sauce are going on a pizza tonight with some additions!
