Had leftovers of mine (how ironic for a meal made from leftovers), but would definitely repeat it anyway.
If blueberry muffins have blueberries in them, what do vegan muffins have?

When we set this up I had no idea what was going to happen this week!  I have technically done the project - but it's not what I wanted.  

The rest of this week meals are going to be really haphazard since I'm packing up most of the loose kitchen stuff!

I can't wait to get this done and over with!

Well . . . not really.  Sort of!  No almonds, no bacon and I used rice.   Sad I didn't want to open a pkg of bacon to sit for days or open the brand new bag of almonds. LOL Excuses! Jean would send me to my room.
You only live once . . . but if you do it right once should be enough!
