After the Scholarship Fundraiser Dinner I'll be working on in Windsor, Colorado next week, we'll be going on to Portland where a friend has asked me to do a buffet for him. A few days of business meetings and he wants to entertain them one evening. He lives on a houseboat (excuse me, they are now called floating homes...) so not much seating. It will be all buffet/easy eating goodies.
My Menu -
Assorted Cheese Tray - with grapes, Honeycomb, Chutney
Garlic Roasted Shrimp Cocktails - served as shooters
Crostini - roasted red bells, basil, parm
Crab Deviled Eggs
Tortilla Wraps (2) - Roast Beef, Spinach & Provolone and Poblano, Cream Cheese Siestas
Sausage & Cream Cheese Mushrooms
Antipasto Tortellini Salad
Caesar Salad
Thank God, no desserts! (I dislike baking/pastry) He wants them to go home early.
So, I'll be getting my hand back in catering again and having fun for the next two weeks.
