Easy Coq au Vin

Hi, in the process of moving a few months ago, I seemed to have misplaced one of my Cuisine at Home issues from last fall. I was wondering if anyone remembers the recipe for what I think was called Easy Coq au Vin. It was made with leeks and I think white wine.

It was delicious and I'm missing it terribly!

Hi and welcome. I hope you find it soon, it would really stink to have lost it for good
I'm pretty sure I can find that Coq au Vin recipe. I'll go look and get back to you soon. Meanwhile,Twighlight will probbly already have it done, won't cha Tammy!

Quick Coq au Vin from issue 53
4 bone-in chicken thighs
4 drumsticks
salt and pepper
1/2 C all purp flour
2T olive oil
2C leeks, trimmed julienned
1C baby carrots
8oz whole button mushrooms
2T tomato paste
1T garlic, minced
1C dry white wine
1/2C chicken broth
1 sprig tyme
2T unsalted butter
Season chicken with salt and pepper, dredge lightly in flour
Heat oil in saute pan over med high. Add chicken and brown on all sides,remove. Pour off all but 1T drppings and return pan to heat.
Saute leeks, carots and mushrooms for 3min. Stir in tomato paste and garlic, saute 2min. stir often
Deglaze pan with wine and reduce for 3min, add broth and thyme. Return browned chicken to pan and bring to a boil. Cover, reduce heat to med-low and simmer 20 min
Stir in butter until melted, then season with salt and pepper. Remove and discard sprig
