I had a wonderful soup on holidays, and when I asked what was in it, all I got is corn and crab.......
Does anyone have a good recipe for this type of soup?? I am starting to plan my menu for a Christmas dinner party at the end of the month. Thanks.......

Here are two I have, but haven't made either one. Maybe one will give you an idea.

Corn and Crab Bisque

Amount Measure Ingredient -- Preparation Method

3 oz. bacon
1/2 onion -- finely chopped
1/2 cup chopped celery
1/2 green pepper -- finely chopped
1/2 red pepper -- finely chopped
1/2 cup raw peeled finely chopped potatoes
3 cups water
1/4 teaspoon paprika
1 bay leaf
3 tablespoon flour
2 cup milk
2 cup cooked silver queen corn
1/2 lb. crab meat
Garnish: fresh parsley


Sauté bacon until crisp. Remove and crumble. In the bacon drippings sauté onion celery, and the peppers until onion is soft but not brown. Add the water, bay leaf, paprika and potatoes and simmer until the potatoes are tender, approximately 35 to 40 minutes.

Bring just to the boiling point, add the flour and 1/2 half cup of milk.

In a separate saucepan, heat crab meat, corn, and the remaining milk. When warmed through (but not boiling), add this and the bacon to the soup mixture. Heat gently for a few minutes. Garnish with fresh parsley.

Crab Pepper Pot Soup

Amount Measure Ingredient -- Preparation Method

1/4 pound bacon, diced -- cooked
1 tablespoon reserved bacon drippings
2 cups tomatoes -- chopped
1 cup onion -- diced
1 cup russet potato, peeled -- diced
1 tablespoon jalapeño, seeded and deveined -- minced
1 tablespoon minced garlic
1 teaspoon kosher salt
1/2 teaspoon red pepper flakes
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried thyme leaves
3 cups chicken broth
4 cups fresh spinach -- chopped
2 cups crabmeat
1 cup canned coconut milk
fresh lime juice -- to taste
chopped scallions
reserved bacon

Saute bacon until crisp in a soup pot; drain on paper towels. Reserve 1 Tbs drippings in the pot and discard the rest.

Stir into the pot the tomatoes, onion, potato, jalapeño, garlic, and seasonings. Cook over medium heat, stirring often, until the onions are soft, about 5 minutes.

Add the broth and bring to a boil. Simmer soup for 10 minutes.

Gently stir in spinach, coconut milk, and crab. Simmer 3-4 minutes to heat through.

Finish soup with lime juice, and garnish with scallions and bacon.
