Here is the recipe for anyone who needs it.

Reuben Hush Puppies with Swiss Cheese
Yield: 24
Source: Cuisine at Home Magazine, Issue No. 62

1/2 cup whole or 2% milk
1/3 cup all-purpose flour
1/4 cup yellow cornmeal
1/2 cup scallions, thinly sliced
1 egg
2 Tablespoons sauerkraut juice or dill pickle juice
2 teaspoons baking powder
2 teaspoons dry mustard
1/2 teaspoon kosher salt
1/2 teaspoon sugar
1/2 teaspoon cayenne
1/4 teaspoon baking soda
1. Heat to 350 degrees: peanut or vegetable oil, 3" deep

Stuff with and fry: 24 cubes Swiss cheese (1/2" chunks"

Serve with purchased 1000 Island dressing

2. Combine all ingredients (except oil, cheese, and dressing) in a bowl. Cover and chill batter for 15 minutes.
Heat oil to 350 degrees in a saucepan over medium heat. Oil must be 3" deep.
Stuff a cube of cheese into 1 T. batter. Fry in oil in batches until brown, crisp, and cooked through, 3-4 minutes, turning often; drain on paper towels. Serve with dressing for dipping.

Tip: Use a small scoop or a tablespoon measure to portion out the batter.

Since it's issue #62, it isn't on the other board yet - what does the mag. suggest go withs???

Maybe as an hors to St. Patty's dinner??

Well, it doesn't actually...it seems to just be a recipe to use up a small amount of leftovers. It sounds so good though, I would cook a corned beef just to make these!

If you want to make the whiskey glazed corned beef, the suggested sides sound very good. They are whipped parsnips and potatoes, using yukon gold, parsnips, half and half, butter, and scallions, yummmm! and sweet'n sour cabbage with maple, bacon and lemon. That's like a hot bacon dressing over cole slaw mix. This is sounding better and better, guess I'll have to make the whole meal.

Let me know if you need the other recipes, I'll be glad to post them.

To be honest, I never thought about sides with the reubens. Since I'm doing the traditional stuff with the brisket, I think I might do the sweet and sour cabbage with the reubens because I want to, and I don't have that many opportunities to do things like this. I offered this dinner in its original state to my ex-hubby and the kids next week, and the kids politely said, yes, good, but ex was excited, and I'm glad someone besides me will enjoy it!

I'm looking forward to the reubens and the cabbage, I get to eat it all

Jan, I cannot believe you don't care for corned beef and cabbage with mash. Try making colcannon and see if that is more to your taste.
