Chocolate Mousse Cake Recipe

  Re: (...)
I'm reposting this recipe under a new thread because I left out a little detail. I'm not sure if it makes a whole lot of difference but I'm doing it anyways, I don't want anyone to have an overbaked mousse!

The correction: Bake until pick inserted 2 inches from edge comes out clean. The original post was vague, sorry about that.

Flourless Chocolate Cake

Preheat oven to 350

Grease 10"x3" springform pan

2 8 oz pkg semisweet chocolate, chopped (you can use chocolate chips, almost 2 3/4 cups, I have good luck if I strain after melting)
2 cups butter
1 cup sugar
1 cup half and half, or light cream (I use light cream)
1 T vanilla
1/2 t salt
8 large eggs

In heavy saucepan, over low heat, melt semisweet chocolate, butter, sugar, cream, vanilla and salt. Stir frequently until smooth.

In lg bowl, beat eggs. Gradually beat in warm chocolate until smooth. Pour batter into pan so that it spreads evenly.

Bake 45 min or until toothpick inserted in cake 2 inches from edge comes out clean. Cool completely on rack.

When cake is cool, release from pan. Refrigerate at least 6 hrs.

Glaze with:

In heavy 2 qt pan, over low heat, heat 6 oz semisweet chocolate pcs. Add 2 T butter, stirring often, until melted and smooth. Remove pan from heat, add 3T milk and 2 T corn syrup.

Add a dollop of whipped cream, if desired.(And some juicy strawberries!

PJ

Edited to add, this cake will sink in the middle while cooling this is the way it is supposed to be, so don't be alarmed!

I deleted the first one I copied and replaced it with this one.
Don't wait too long to tell someone you love them.
