Hamburger Recipes!!!
  Re: (...)
O.K., Ron has lots of burger in the freezer and I'm a little old lady on Social Security, so....let's bring back our favorite hamburger recipes from long, long ago and put them on the front burner!!!

Here goes -

Recipe by: (Lorraine/Ambassador) Toronto
(a recipe from Share a Recipe Cookbook)

1 1/2 lbs hamburger meat
1 med onion, chopped
2 8-oz. can tomato sauce
2 c water
2 can consomme
1 can tomato soup
4 carrots, chopped
2 bay leaves
4 celery stalks, chopped
1/2 tsp dried thyme
8 Tbsps barley, or 1/2 cup raw rice

Brown the meat and onions; drain well.
Combine all ingredients in a large pot, and simmer 2 hours or all day.

"My mother used to make a version of this to feed all of us 7 kids."

NOTES : You can substitute canned tomatoes for the sauce, which is what I normally do. If you don't have the consomme, add water instead.
If you don't have the soup, leave it out. It's a very forgiving soup. You can add cabbage, broccoli, cauliflower, zucchini...anything that is in the fridge.
This is still a favorite in our house.

Thank you!!! I've got 9# of hamburger cooked and in the freezer (1# packages), so I'd like to make several different recipes for variety. Had cheeseburgers tonight and they seemed okay.

What the heck was that? I typed out 2 recipes and it took me so long that when I pressed send, it said my post was no longer valid.

I'll do them again later. That was very annoying.

Tamale Pie

1 1/2 c cornmeal
1 1/2 c milk
8 oz shredded cheese

1 pound hamburger
1/2 pound bulk pork sausage
1 med onion, chopped
2 cloves garlic, minced

1 - 28 oz can tomatos (I mixed 15 oz tomato sauce with 1 can of Rotel)
1 - 15 oz can corn, drained
1 T chili powder
1/2 t oregano
1/2 t cumin
a sprinkle of cinnamon
1 c ripe olives, sliced

Mix cornmeal and milk in a small bowl, set aside.

Heat some oil in a wide frying pan over med heat. Add beef and sausage and cook until well browned. Spoon off excess fat. Add onion and garlic and cook until they have softened.

Stir in tomatos and their liquid (or my mixture), corn, chili powder, oregano, cumin and the sprinkle of cinnamon.

Cover and reduce heat. Simmer for 10 minutes..

Spread beef mixture in a PAM'd 13x9 casserole. Spoon cornmeal mixture over the top, evenly. Sprinkle with the cheese.

Bake uncovered in a 350* oven for 45 minutes.

Makes 6 servings. In my house it makes 8 servings. I freeze the other six in individual servings. (After it's cool, they can be sliced and set on wrap, then FoodSavered after they have frozen. Does that make sense?

I put a dollop of sour cream on each serving and sprinkle with some leftover black olive slices, green onion and shredded cheese.

Don'tcha just hate it when that happens? If I think I'm going to be particularly long winded or if I'm typing recipes, I try to remember to do it in Word first, then copy and paste, but I'm not always that on top of things

We'll all be here tomorrow, Jan!

Whew! Here's #2. I know that happens but never plan it dragging out that long. It's usually not the typing time, I just get up to do something like get a soda and my time expires. Grrrr!

I love this dish and eat it quite frequently for breakfast/brunch. LOL, I make 1-2 servings, not 6.

Joe's Special - (4-6 servings)

2 lbs ground beef
1 t olive oil
2 med onions, chopped
2 cloves garlic, minced
1/2 lb mushrooms, sliced
1 t salt
1/2 t nutmeg
1/2 t oregano
Sprinkle of red pepper flakes
1 - 10 oz pkg spinach, thawed and drained well
1/4 c grated Parmesan cheese
4-6 eggs, lightly beaten
Additional cheese, like always )

Cook beef in oil until crumbly and browned. Add onions, garlic, and mushrooms; cook, stirring occasionally, until onions are soft.

Stir in salt, nutmeg, oregano, pepper, spinach, and cheese; cook for about 5 more minutes. Add eggs, reduce heat to low and gently stir mixutre until eggs set up to your liking.

Pass additional cheese at the table.

Please spay and neuter your pets.
