Does anyone have a recipe for fajita seasoning? I don't really like to buy those packets if it can be avoided.

I don't know if this is what you had in mind, but this a fajita seasoning used in Chevy's/Rio Bravo's fajitas. It's from the book.

Fuego Spice Mix

1/4 cup paprika
2 teaspoons cayenne
2 tablespoons salt
2 teaspoons ground white pepper
2 tablespoons black pepper
2 tablespoons granulated garlic
2 tablespoons chile powder
2 tablespoons oregano

Combine all ingredients, mixing well. Store in an airtight container, out of direct light, for up to 6 months.

And that's "chile powder" with an "e" not an "i"...not sure if that makes a difference, but it might.

I use a shaker of Zach's fajita seasoning to taste and add garlic powder and pepper to taste--liberal amounts--rub in and let sit 30 minutes or so before grilling. (Beef)

Bill, your idea sounds good too, except that I haven't seen Zach's in Ohio. I'll keep my eyes open for it though.

Maryann, I'm pretty sure you have Dollar General there. They have a Latin section where you can get Adobo garlic spice. It has black pepper and I'm not sure what else already in it. That and some Cayenne works for me with chicken fajitas

Cis, thank you! Adobo seasoning is readily available everywhere here, I just didn't know what it was used for.

Fajita Seasoning

Recipe By :Busy Cooks
Serving Size : 1 Preparation Time :0:05
Categories : Marinades-Seasonings-Rubs

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 tablespoon cornstarch
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon sugar
3/4 teaspoon chicken bouillon cube -- crushed
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne
1/4 teaspoon cumin

Combine all of the ingredients. Pour into a small airtight container and store in a cool, dry place. Makes the equivalent of 1 packet of commercial or purchased seasoning.
Don't wait too long to tell someone you love them.
