I was working on getting my boat ready for fishing opener this week and didn't have time to go to town shopping. I asked Sherrie to pick up tortillas when she was in town. Naturally she brought back corn tortillas. I can eat them, but like the flour a lot better.

I had lots of chicken and pork leftover this week (due to my new smoking endeavours), so I brought them in to make wraps for lunches for my 2 staff and I. I found them really easy to work with, and they stayed together, were easy to eat, and not as heavy as some I've had. Mind you, I've never had real corn ones, only the flavoured ones you buy in the grocery store. You know, the flourescent green or pink ones.

just went to a cooking class and we had - Fish Taco's
new to me. on Great Tortilla's - flour one home made
came with a roasted corn mango salsa
anyone want the recipe?

Fish Taco Party

2 pounds white fish/ such as halibut or cod
Sauce for Fish:
1/2 cup canila oil or olive oil
2 limes juiced
1/2 cup cilantro coarsely chopped
2 tbs. chili powder
1 jalapeno, seeded and coarsely chopped

wish above together, put fish in medium size dish and marinate with sauce for 15- 20 minutes.
Remove from dish and salt both sided of fish.
Preheat grill med/high heat. Grill 4 minutes each side let
fish rest for 5 minutes before serving.
(keep in a warm oven )

Hand made Corn Tortillas or fesh ones from the store -
we have a store out here that makes home made ones.
(warm in oven)

Lime Cream:
1/4 cup mayonnaise or less
1/2 cup non fat sour cream
2 tbs fresh lime juice
1 ts. finely greated lime peel
salt and pepper to taste

Wish in small bowl ( can make up to 3 day prior, cover and
refrigerate)

spread on tortilla - fish on top of it.

Grilled Corn Mango and Avocado Salsa

2 ears grilled corn - remove from cob.
1 mango diced
1 small red onion finely diced
1 roasted red pepper - diced
1 small julapeno diced with out seeds
3 tbs. chopped cilantro

mix togeter in medium size bowl

1 tbs olive oil
salt and pepper to taste
1/2 lime juiced
1 hass avocado - diced

mix olive oil, juice and salt and pepper together and toss with salad. before serving add avocado and more olive oil and salt and pepper if needed.
serve on top of fish.

These were great. hope you enjoy
