BARBECUE SAUCE - Heart Healthy

Recipe By: Choices for a Healthy Heart, Joseph C. Piscatella

2 15 oz. can tomato sauce
1/3 c cider vinegar
2/3 c white wine vinegar
1/4 c liquid smoke flavoring
1 1/2 tsps tabasco sauce
1 1/2 tsps Dijon mustard
3 clove garlic -- peeled
1/3 c brown sugar

IN a med. stock pot, combine ingred.
Bring to a boil over high heat, stirring frequently.
Reduce heat & simmer, uncovered, 1 1/2 hours.

NOTE: Sauce will keep 4-5 weeks in frig & may be frozen. The flavor is superior to that of commercial barbecue sauce - per cookbook author.

Yield:

Serving Ideas : Excellent on chicken, salmon, scallops (seems like it would overpower scallops!?), & oysters - especially oysters on the he half shell.

This sounds great for ribs!!!! I don't think it would be too good for scallops or another light seafood---IMHO---as you said, too overpowering. I have copied though for the more "robust" dishes. Thanks, Jean!!!!

This really does sound excellent, especially since it has less sugar than most BBQ sauces usually have, and I think that would make it taste even better. Sometimes they are just too sweet. Thanks Jean!

Thanks Jean! We used to use Lea & Perrins BBQ sauce, but the stores here quit carrying it. It wasn't as sweet as most of the others. The only way I can get it now is buy a case of it from the company.

This whole recipe only has about 10pts, Jean. That's great for enjoying BBQ sauce.

Do you all remember the soup recipe I posted some time ago from Marilee? The whole pot of soup only had 5 points in it. If you want, I'll post it again.

I don't know since I've never hear of that soup. This one is from one of Marilee's co-workers.

Joy's and Marilee's Vegetable Soup

Recipe By :Joy Mariner and Marilee Frigaard
Serving Size : 0 Preparation Time :0:00
Categories : Soups-Stocks-Sandwiches

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cubes Knorr Tomato Bouillon with Chicken
1 head cauliflower
3 stalks broccoli
1 large sweet onion -- chopped
4 medium carrots -- chopped
2 tablespoons chopped garlic -- or to taste
32 ounces *chicken broth
2 small zucchini -- optional

*Use either the chicken broth or water as you please. Marilee likes garlic, so she adds lots, do as you like.

Separate cauliflower and broccoli into flowerettes; chop onions and carrots.

Start the carrots simmering in the broth/water. Meanwhile saute the onions in a small amount of oil/butter until transparent; add the garlic and cook until fragrant, then add to the carrots.

Roughly chop the broccoli and cauliflower and add to the carrots. Peel the broccoli stems, chop and add to the mixture. Add the bouillon cubes and stir to dissolve. Season to taste with salt and pepper.

Simmer until the vegetables reach the desired doneness. Some like the vegetables to cook until they begin to break down, others like them more al dente. Add the zucchini (if using) just before you take it off the heat.

Variations:
1. Add chunked chicken to taste.
2. Add a can of Mexican Salsa to taste.
3. Add 1 (or more) cubes of Knorr Chipotle bouillon.

What you add to the soup and how you season it, depends on the mood of the day.

NOTE: If you add the can of chicken to the basic recipe it adds 5 WW points, otherwise the pot of soup equals 0 WW points.

Yield:
"6 cups"

Yes, that's the one, Billy. A lot of women swear by that soup for keeping them on track when the hungries hit. I've heard of others who do a "soup fast" for a day or two every few weeks.
