This is the best angel food cake you will ever eat! Great with fresh fruit.

Angel Food Cake

1 1/8 cups sifted cake flour, add:
3/4 cup sugar, sift together and set aside for later

Put into large bowl of Mixmaster:
1 1/2 cups egg whites (11 to 13 whites)
1/2 teaspoon salt
Beat on No. 10 speed until foamy, about 12 minute, then add:
1 1/2 teaspoons cream of tartar
Continue beating until whites stand in peaks, then
Add:
1 cup sifted sugar--while beating on No. 8
Turn to No. 2 speed and add:
1 teaspoon vanilla extract
1 teaspoon almond extract

Sprinkle reserved flour mixture evenly over batter and fold in. Pour into a tube pan.
Bake 375 degrees for 30 to 35 minutes.

Serves 12

No kidding! I bought cake flour today for the second time in my life. How did I know???? (actually it was purchased for cupcakes I was going to make, but have since decided against, so I'm happy to have a use for this cake flour)

Once my baking skills return, I will make this.

You are very welcome everyone! It really is worth the bother, you will see. Vicci, you just knew that cake flour was going to come in handy for something this summer. Did you have a chance to try the C@H recipe for coconut pound cake. It was fantastic!

Oh, this takes me back! In High School, my birthday cakes were homemade Angel Food with Peanut Butter Icing. These were the days before Angel Food mixes, thank goodness!

I appreciate the absolute best tried and true. Thank you!
