This just looked so good and a nice summer meal - so thought I would share it. I have not tried it. It is out of the new weeknight menus vol. 2

pepper. (may be made and chilled up to 2 hours ahead)

Toast bread buttered side down on a griddle or in a non-stick skillet over

the bread won't get too crunchy).

Thanks Erin, this sounds like a very good recipe, especially in this hot weather we're having. Sure wish I could get a copy of Weeknight Menus II. Haven't seen it anywhere, at least not yet.

There's a weekend menus II? I don't see it listed anywhere on the website. Is this in weeknight grilling?

No - I just happened to be looking at the magazine rack in Borders book store and saw a Weeknight menus magazine that had a different cover than the one I had. Picked it up and realized the magazine was completely different and noticed the Volume II on the cover. I have not found it on the web site - only in the book store.

I've just spent a few minutes searching the web for this title. It isn't showing up anywhere. I'll run by Borders to see if it's available here.
