Could someone post a recipe that was in Weeknight Menus Vol 1 "Asian Pork Sandwich". There was a Asian Pork Salad in that issue that I would love to have.

Man, does this ever look good!!!

Half-moon Salad
Makes approx. 4 cups

Whisk Together:
1/4 cup rice vinegar
1 T. sugar
1 tsp. kosher salt
Toss with; Add:
1 cup cucumber, seeded, thinly
sliced into half moons
3/4 cup bean sprouts
1/4 cup torn fresh cilantro leaves
1/4 cup torn fresh basil leaves
1 jalapeno, seeded, chopped
4 cups spring mix lettuce greens

Whisk vinegar, sugar, and salt together until sugar is dissolved.

Toss with cucumber, sprouts, herb leaves, and jalapeno; set aside. Add greens just before assembling sand¬wiches so that they stay crisp.

Asian Pork Sandwich
Total Time: 45 Minutes
Combine:
1/4 cup hoisin sauce
2 T. honey
1 T. ketchup
1 T. chili garlic sauce
1 T. rice vinegar
Saute in 1 T. Vegetable Oil; Stir in:
1 lb. ground pork
1 T. fresh ginger, minced
1/2 cup scallions, chopped
Salt and pepper Coat and Toast:
4 slices baguette, 1" -thick
4 tsp unsalted butter Top Baguette Slices with:
4 tsp mayonnaise, divided
1/2 lb. deli ham, thinly sliced, divided
Half-moon Salad
Preheat oven to 450°.

Combine hoisin, honey, ketchup, chili garlic sauce, and vinegar in a bowl; set aside.

Sauté pork and ginger in a sauté pan over medium ¬high heat for 5-7 minutes, until cooked. Drain, return to pan, stir in hoisin mixture and scallions. Season. Coat each baguette slice with butter and place on a baking sheet and toast 5 minutes in oven. Cool.

Top with mayonnaise, ham, ground pork mixture, and finish with the Half-moon Salad.

Hope you enjoy it, Bonnie. This was the first recipe I used when the magazine arrived, and have made it several times since. We really liked it.

Wow! Will have to mark this one. Maybe next week.

Will change the salad part, though, since I don't like cucumbers (and vice versa), and we don't have bean sprouts here (unless, of course, I try my own with red beans, but that's not the same thing).
If blueberry muffins have blueberries in them, what do vegan muffins have?

I made some Chinese Pork Buns a while ago. I'm not sure how similar they are to the recipe in Menus vol 1 but they were delicious. Here is a link to the recipe with instructions and photos:
