Here's a kind of sweet and sour I just threw together as an experiment with some leftover roasted chicken one night.

- Meat pulled from two cooked chicken thighs and drumsticks.
- 1 C Pineapple juice
- Pulp and seeds from three passionfruit
- 2 Tbsp Light-brown sugar
- Bring everything to a simmer together in a sauté pan.
- Simmer until reduced completely (i.e. all liquid is absorbed/evaporated).
- This would probably work well with uncooked chicken marinated in the mixture overnight.
- Passionfruit seeds are crunchy. To make the crunchy bits smaller, purée the passionfruit pulp and seeds first.
- When selecting passionfruit, the ones that look wrinkly and old are the good ones, and the ones that look pretty and smooth are not as good.
