Does anyone have a good apple cake recipe....I'm craving something moist and flavorful, good as a breakfast treat, but quick to whip up. Any ideas out there?

Jenni, there are a couple in my mom's recipe files. Give me a little time to look them up and put them in MC, then I'll post them. There is one in particular that was really, really good and I have to figure out which one it was.

Jenni, I was going to recommend the Applesauce Muffins that "someone" posted the other day because I made them and they were very, very good! Went to the thread to find out who posted it, and it was YOU!!! They were whipped up and baked in about 20-25 minutes! They are very moist and really quick! I used the Musselman's Natural CHUNKY applesauce, not the regular as the recipe calls for. It was nice because the muffins were polka-dotted with the chunks of apple and to get that with your bite was a bonus! I have some cake recipes, too, and will type them up and post for you.

I have two, but can only find one of them right now. The other one is actually my favourite, but this is a VERY close second. I will post the other later, once I find it. Apfel KuchenIngredients:- 1 1/2 C Flour
- 1 C Sugar
- 1/2 C Butter
- 1 t Baking powder
- 2 Eggs
- 1 T Milk
- 1/2 t Lemon juice
Instructions:
- Mix all ingredients. Dough should be easy to handle (if too sticky, add flour until easy to handle).
- Spread dough on cookie tin and push to cover tin (nice and thin).
- Place sliced apples on dough.
- Bake at 425 for 10 minutes.
- Lower to 375.
- Add: Sugar and cinnamon (sprinkle profusely over apples and dough).
- Dot with butter
- Bake at 375 for 15 minutes or until apples are tender.
Edit: Okay. Found it. Nobby Apple Cake (Yes, that is the correct spelling) Ingredients:- 1 cup sugar
- 1/4 cup shortening
- 1 egg beaten
- 3 cups diced apples
- 1 teaspoon vanilla
- 1/2 teaspoon baking soda
- 1 cup flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 cup chopped nuts (optional)
Instructions:
- Pare and dice apples.
- Cream shortening and sugar.
- Add beaten egg, apples, nuts (if using), vanilla and sifted dry ingredients.
- Bake in greased 8x8x2 inch square pan in 350 degree oven for 45 minutes or until golden brown.

These sound yummy, Lab thanks for posting them. We just took the kids apple picking today, so I have some apples I need to use up! (23 lbs. to be exact!)

I have one from my mother in law.
Somerset Apple Cake 75 grams/3 oz butter 175 grams/ 6 oz caster sugar(superfine) 225 grams/ 8 oz self raising flour 450 grams/1 lb apples peeled cored and cubed 2 beaten eggs 2 Tbs milk 1 Tbs granulated sugar
1. Greaswe and flour a 9" cake tin 2. cream butter and cugar until light and creamy 3. mix 1 Tbs of flour with the apples in dish 4. Put eggs and milk in bowl with butter and mix 5. Add remaining flour and mix. 6. Add apples to the creamed mixture and blend well with wooden spoon. 7. Turn into prepared pan and sprinkle with granulated sugar. 8. Bake in oven at gas mark 4/350f or 18 degrees c between 40 to 60 minutes until golden brown. 9. Leave in tin to cool and then turn out Can be served cold as a cake or hot as a pudding with cream or custard. You can add spices like cinnamon to taste if you want.

APPLE CAKE WITH CARAMEL SAUCE this is a recipe from a friend who was the chef at J's Winery in Sonoma County - it's wonderful. Serving Size : 12
1 1/2 cup Wesson oil 2 cup sugar 3 eggs 3 cup all-purpose flour 1 tsp baking soda 1/2 tsp salt 1/2 tsp nutmeg 2 tsps cinnamon 3 cup coarsley chopped Granny Smith apples, UNPEELED 1 cup walnuts 2 tsps vanilla CARAMEL SAUCE: 1 cup butter 2 cup light brown sugar 1 cup heavy cream
Preheat oven to 325°. Butter & flour a 10" Bundt pan. Using an electric mixer, blend together the oil & sugar in a large bowl. Add eggs, 1 at a time, beating well after each addition.
Sift flour, soda, nutmeg & cinnamon into egg mixture, beating thoroughly. The batter will be very stiff. Fold the apples & walnuts into the batter with a spatula, then stir in the vanilla. Spoon batter into prepared pan.
Bake for 1 1/4 hours, or till a pick inserted in cake comes out clean. Place pan on a rack; let cool for about 1 hour.
TO MAKE CARAMEL SAUCE: Melt butter in a heavy-bottomed saucepan set over medium heat. Stir in brown sugar. When sugar dissolves, add the cream, whisking to form an emulsion.
Gently turn cake out onto a plate. Pour about 1/2 cup of the warm sauce over the cake to form a glaze.
Serve immediately, with a little of the remaining sauce spooned over each slice, or let the cake cool completely.
The sauce keeps well in frig, but it should be reheated before serving.

Apple Squares
Recipe By :unknown Serving Size : 0 Preparation Time :0:00 Categories :
Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups flour 1 teaspoon baking soda 1 teaspoon baking powder 3/4 cup sugar 1/2 pound butter or margarine 3 eggs 1 teaspoon vanilla 6 to 8 apples -- sliced 1 1/2 cups sugar 1/2 teaspoon cinnamon
Sift dry ingredients. Cut in margarine. Add eggs and vanilla; mix well. Spread by hand on ungreased cookie sheet with sides. Combine apples, sugar and cinnamon and spread over dough.
Bake 350 degrees 30 to 40 minutes. When done, top with beaten egg whites and chopped nuts.
Variation: marshmallows may be used.

Combine and mix first 6 ingredients in mixing bowl. Separate eggs and beat together with oil. Pour into dry ingredients, mix well. Fold in drained apple slices, vanilla and nuts. Bake in an ungreased 9 x 13 pan, 350 degrees, for 30-50 minutes.
