Poor Roy, almost went an entire summer without his favorite tomato salad!!!! Made it this morning and now it's ready for us. And I even had two Cherokee Purples to use in this.

ROY'S COLD ITALIAN TOMATOES

10 tomatoes, sliced
5 ounces olive oil
1 1/4 teaspoons hot sauce
1 1/4 cups chopped fresh basil
grated Parmesan cheese -- aobut 1 cup
1 1/2 T. fresh ground pepper

Arrange tomato slices in a dish.
Whisk together oil & hot sauce; drizzle over tomato.
Sprinkle w/basil, cheese, and pepper.
Cover and chill 8 hours.

3-4 servings.

This is our favorite salad----I sub the hot sauce though with a bit of lemon/lime.

I just happened to pick some tomatoes last night - ooops no moz. must run to the store.

Nice, Jean! I do this also, Rox, but use a tiny bit of good balsamic instead of the hot. Pretty much summer at its best!

Don't mind me - I'm there now! 2 nights with no sleep = basket case. I'm fine now. I think I will make this to go with our Mexican wine bottling dinner tomorrow.

This sounds delicious. I like the addition of the hot sauce. This is a twist on one of my favorite hot weather meals: tomatoes warm off the vine, sweet basil from garden, spicy olive oil, buffalo mozzarella, then add salt and pepper.
