We are getting tired, real quick, of having vinegar-based/vinaigrette-type salad dressings. . .they are all pretty much the same with prominant vinegar and oil base, basil, oregano, onion, garlic....

Would appreciate your posting of your fav salad dressing/s for a change of pace. Especially looking for a nice pom dressing, which doesn't matter if it is a vinaigrette-type dressing. Have tried a few recipes and they did not go over well. Poms are in abundance around here now, picked up half a dozen yesterday at the market, they were on sale 2/$1.00. TIA!

Linda, I don't have exact proportions for this one and it may be too much like your other vinaigrettes,

I make a citrus vinegarette with balsamic, orange or lemon juice, a shallot, etc. Make a nice mixed green salad, pomegranate seeds, diced apple and maybe some blue cheese crumbles. very good. Light and very flavorful.

This is also a good one, Made it last T-day and is on the menu for this year. PJ, did you give this one? If, not it was someone on this forum who gave the recipe. Sorry for not remembering....

Apple, Walnut, and Mixed Greens Salad with Zinfandel-Cranberry Vinaigrette

1 cup sweetened dried cranberries (such as
Craisins)
3/4 cup apple juice
1/2 cup zinfandel or other fruity dry red wine
1/2 cup cranberry juice cocktail
3 tablespoons minced shallots
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon walnut oil
10 cups gourmet salad greens
3 cups cubed Gala apple (about 2 apples)
1 cup thinly sliced Walla Walla or other sweet
onion (about 1 medium onion)
1/3 cup coarsely chopped walnuts -- toasted

Combine cranberries and apple juice in a medium saucepan; bring to a boil.
Remove from heat; let stand for 10 minutes. Drain cranberries; discard
apple juice. Set cranberries aside.

Bring wine and cranberry juice to a boil in pan, and cook until reduced to
1/3 cup (about 8 minutes). Pour wine mixture into a medium bowl; add
shallots, lemon juice, salt, and pepper. Gradually add oil, stirring with
a whisk.

Combine cranberries, greens, apple, and onion in a large bowl. Drizzle
dressing over salad; toss gently to coat. Sprinkle with toasted walnuts.

NOTES : Tossing the cubed apples with lemon juice will help keep

Seems as tho whenever I get bored with my dressings, I go looking for jam and jelly in the frig and use those as the base for dressings - a little oil, mustard, herbs/seasonings and a nice dressing is at the ready.

Here's a couple other ideas to kick start your salads Linda -

Poppy Seed Dressing

8 fluid ounces cider vinegar
6 fluid ounces honey
3/4 teaspoon salt
1 teaspoon dry mustard
2 teaspoons celery leaves -- minced
1 green onion -- white only, minced
8 fluid ounces vegetable oil
1 1/2 tablespoons poppy seeds

Combine the vinegar, honey, salt, mustard, celery and green onion.

Beat in the oil, by droplets at first, then in a stream,

Add the poppy seeds and beat to distribute.

Yield:
"1 pint"

For a creamier texture, make the dressing in a blender or food processor.

RASPBERRY & WALNUT VINAIGRETTE

1/2 teaspoon honey mustard
2 tablespoons raspberry vinegar
3 tablespoons walnut oil
3 tablespoons olive oil
1 tablespoon minced fresh tarragon

Combine the mustard and vinegar together in a deep bowl. Add the oil in slow, steady streams, whisking until an emulsion is achieved. Blend in the tarragon.

Combine, whisking in oil till emulsified; stir in tarragon. Makes about 1/2 cup

Topping a green salad with this dressing and candied walnuts and fresh raspberries is a real treat.

Sure is....almost makes you NOT want to cook/prepare meals....almost!!!

Recipes I was hoping to get my hands on are the honey, lemon juice ones as the "main" ingredient....and with some fruit. We eat a lot of salads (the baby greens, frisee, baby reds, etc.) and also like to put fruit, cheese (gorg, blue -- especially STILTON!!! yummmmm!) on them and the vinegar based dressings seem to "compete" with the cheese.

Appreciate more ideas anyone may have!!!! TIA!

Okay, now I see where you are going with this---takes a while sometimes

Here are a few lovely ones that I have used.

From THE COMPLETE AVOCADO COOKBOOK
by Christine Heaslip

Creamy Orange Dressing

125G cream cheese
juice of 2 oranges, or vary to make dressing required thickness
a handful of fresh mint

I use this with a minted orange and avocado salad

#2 Nordic dressing

1 TBS honey
1 TBS lemon juice
salt and freshly ground black pepper
1/2 cup sour cream

Beat honey, lemon juice and seasonings with a fork in a bowl. Gradually beat in sour cream.

I serve this with an avocado/pear salad with julienne strips of Jarlsberg cheese

#3 Tangy dressing
4 TBS olive oil
1 1/2 TBS lemon juice
1 TBS grated orange rind
1/4 tsp ground coriander
1/4 tsp ground cumin
1 TBS honey (I add more)
Salt and freshly ground pepper

Shake all ingredients together in a jar and aloow to marinate for at least 30 minutes...longer is better.

I serve this with a rice and avocado salad.

Now how easy are those??? And they are really GREAT!!!!

If anyone wants the recipes for the salads that they accompany---just give me a holler!!!

Roxanne, you may find this hard to believe, but I have not had an avacado in about 25 years! I had tasted an avacado dip or spread or something and it was horrible! Since then, I NEVER even attempted to taste another! Hear it all the time that they are "buttery", smooth taste, and other comments all along those lines...would like to try them again but skiddish....unless they are in something or prepared in a way that will not turn me off to them for another 25 years! Would any of your salads do the trick? I would be interested in your salads, regardless! We love 'em here and sometimes have a "hearty" salad as a meal -- with or without protein of some sort!

I think that you will find the addition of the other fruits etc in these salads will change your mind re: the avocado....I'm sure you know the things to look for when buying one? If it is not soft and unripe when you purchase, just put in a brown paper bag with a banana and you will have a nice ripe, buttery, smooth avo in a couple of days (or sooner, maybe). You could always try a little on a corner of the salad and discard immediately if you decide you do not like the taste....if you don't, just send it to me I'll eat the whole dang thing

Minted Orange and Avocado Salad

4 slices fresh pineapple (I have used canned slices and they are just as good if not better!)
4 lettuce or curly endive leaves
2 avocadoes, finely sliced
2 oranges, peeled and segmented

Garnish
orange and chive shreds
2 TBS roasted chopped hazelnuts

Place pineapple slices on lettuce leaves. Arrange avocado slices and orange segments over pineapple. Spoon over the Creamy Orange Dressing (previous post) and garnish with hazelnuts, and orange zest and chive strands.

#2 Nordic Avocado Pear Salad

2 avocados sliced
2 large pears (peeled only if skin isn't in good condition) and finely slice-----canned works well here, too.

4 large slices Jarlsberg cheese, cut in julienne strips
4 lettuce leaves
2 TBS pecan nuts, chopped coarsely

Arrange avocado,pear and cheese slices attractively on lettuce leaves and top with Nordic dressing (previous post). Sprinkle with a little paprika or poppy seeds to garnish and finish with a sprinkling of pecan nuts.

#3 Rice and Avocado Salad

An exotic blend of sweet and sour flavors, delightful if eaten on its own (or with other salads) or with a curry-flavoured main dish.

2 cups cooked brown rice (I have used white with good results, too.
1 small cucumber chopped
2 TBS raisins soaked in juice of 1/2 orange ro 30 minutes
2 TBS chopped brazil nuts
1/2 green and red pepper, finely shredded
2 small avocados, chopped
2 bananas, halved and sliced

Mix together rice, cucumber, raisins, nuts and peppers. Lastly, toss in avo and banana. Mix in Tangy Dressing (previous post) and serve well chilled.

Note: Allow enough time for the flavor of the dressing to penetrate the salad.

Here are a couple of other ideas that are yummy!!

Avocado Cream Sauce

Delicious served over a salad of luscious tropical fruits.

1 avocado
2 tsps honey (I use more)
300 ml cream

Blend all ingredients until smooth and thick in a blender or processor.

Note: Weight conscious people can sub cottage cheese or nayural yoghurt for the cream.



Alligator Pear Fruit Sauce

Alligator pear was the original name for avocado.

1 avocado
1 TBS honey (More=better )
juice of one orange

Blend all ingredients in a blender until smooth. Cream can be folded through this or a banana can be added.
Note: Serve this recipe over fruit salad tossed in coconut.

Honey-Mustard Dressing

1/4 cup honey
3 Tbs dijon mustard
3 Tbs extra virgin olive oil
1 Tb shallot -- minced
1 Tb apple cider vinegar
Juice of 1/2 lemon
Salt and pepper to taste

Combine all ingredients until blended.

and when I get SO bored making green salads, I make coleslaw a lot and here's one of our favorites from an old Sunset magazine.

COLUMBIA RIVER COLE SLAW

6 Tbsps mayonnaise
2 Tbsps mustard - French's
2 Tbsps sugar
2 Tbsps honey
2 Tbsps vinegar -- cider
4 Tbsps evaporated milk
3/4 tsp horseradish
1 tsp poppy seed

Mix all together and add to:
cabbage, shredded
currants
crushed pineapple (opt)
gr. onions
