Here is something I came up with this last week when the Truck Farmers asked me if I could make them some appetizers using the mushrooms Mrs. Truck Farmer had gotten. I used Pillsbury Crescent Rolls since I didn't have much time or anything else.

Mushroom Filling

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 cups assorted fresh mushrooms, cleaned, chopped and sautéed, include stems -- drain excess water
1 cup cream cheese -- at room temperature
2 tablespoons roasted garlic -- minced or pressed
1/2 cup fresh parsley -- chopped
1 teaspoon lemon zest -- optional
1 tablespoon creamed horseradish -- optional
salt and pepper to taste

Using an electric mixer combine all ingredients and chill.

You can use this filling in pastries, wonton wrappers, as a spread or a dip. If using as a spread or dip bring to room temperature before serving.

I cut the crescent rolls into bite size and spread them with the filling/spread. There were none left.

Yield:

Good thinking, Billy. Years ago I used to do a similar things with cooked chicken, mushrooms and garlic, no horseradish, of course. Rolled 'em up in Pillsbury crescent rolls, baked them off and served with the kids favorite "gravy"..Lipton's??or was it Campbells, cream of chix cup of soup.

Seems like yesterday.

Oooh yeah, I think it would be great in wonton wrappers too, or phyllo cups?

If I remember right Sharon, they had a large variety at the Chinese Grocery and they weren't that expensive. You could even stuff a Fillet Million with 'em!

Hooooo doggie!!! That's right they do have a huge variety and the prices are WOW so I think we'll be stopping there soon. I can just see King Oyster, button, shitake, oyster, and all the rest. Yum.

Bob and I were talking about Portabello "steak" burgers the other night. I think it's time for a shroom feast for sure!
