Another Weeknight Menus 2 dish

I may have missed any reviews on this so please forgive me!!


What an interesting dish this was....the meatloaf came together beautifully and was oh so moist and tender...I made no changes except added a bit of fresh basil with the parsley--- What a fun way to do meatloaf!!! The mustard/ketchup topping crisped beautifully and the tomato gravy was perfect with the potato mash. I added a green salad with citrus dressing----perfect dinner for us!!

I will do this again---a solid 8+

Wonder how it would turn out made in loaf pans? Probably just increase the cooking time a little huh?

But the fun of it was the muffin pan!!! Single portions and really easy to make....I s'pose a loaf pan would work but timing would be a bit longer...what you would normally bake a meatloaf.

Change is nice and this was good and tasty!! Confusedmile

I love making meatloaf in the muffin tins - works so great in the trailer.

A funny P.S. on these - - I'm not letting this darn mystery bag dinner get into my head much, I dreamed last nite I made meatloaf muffins with huge indentations in them and put all the other ingredients in the holes...... but I woke up before I could taste them.
Retired and having fun writing cookbooks, tasting wine and sharing recipes with all my friends.

Jean, this is absolute confirmation that you are a absolute foodaholic. There is no reprieve for you at all. That is probably good news for you. I dream about mad things, like little furry elephants climbing trees, all in wild cartoon colour.

The only problem with the muffin tins Roxanne is the 800 lb gorilla. He usually takes about 1/3 of a 9- x 13-inch pan for one serving.

I'll do this at some point, I've been looking at it. Thanks for your review, I think it would make a perfect snack for the mid-winter, video game crew!
