All I know is I'm doing something with homemade ricotta - lots of ideas everywhere and now in C@H also! There's a Roasted Red Pepper sauce in Issue #12 that looks good. There's also a good lookin' one, Pasta with Spinach pesto, corn, & beans that looks good too. (Issue #46) decisions, decisions....

What are you all up to?

Well, I've got some figure friendly Italian sausage (they're made of chicken and actually pretty darn good), a red bell pepper, an onion and some fresh basil. I need to figure out exactly what to do with it all.

We'll be having some leftover ribs that Ron put in the smoker last night. I bought Sweet Bourbon Glaze from the Pepper Palace while I was on vacation. It's wonderful!

Sausage Arrabiatta
(Cuisine at home, February 2006, Issue 55, p. 20)

Makes: 5 Cups Total Time: 25 Minutes Rating: Easy

Heat; Brown and Add:
3 T. olive oil
8 oz. bulk spicy Italian sausage, crumbled
3 cloves garlic, sliced
1 cup onions, diced
1 1/2 cups yellow bell pepper, sliced
1 t. red pepper flakes

Deglaze with; Stir in:
1/4 cup dry white wine
1 cup cherry or grape tomatoes, halved
Salt to taste

Off Heat, Add:
1/2 cup thinly sliced fresh basil
2 cups hot cooked gnocchi or pasta
1/4 cup Parmesan, shredded




Heat oil in a large saute pan over medium-high. Brown sausage in oil, about 3 minutes. Add garlic, onions, bell pepper, and pepper flakes. Saute until onions are tender, 4 minutes.

Deglaze with wine, scraping up the browned bits on the bottom of the pan; simmer until reduced by half. Stir in tomatoes and cook until heated through, 2–3 minutes. Season with salt.

Off heat, add basil. Toss with gnocchi or pasta, and top with Parmesan.

I'm going to make a Breaded Steak Cutlet with Cream Gravy and believe it or not, Instant Mashed Potatoes. Marilee found these instant mashed at Costco and they are surprisingly good. They are by Paradise Valley, ALL NATURAL Creamy Mash Potaotes, 100% pure & Simple. Contains Russet potatoes, butter and salt. Period. The box weighs 5.6 pounds and contains 14 pouches with 8 servings each for a total of 112 servings.

Although I like lumpy mashed potatoes I did enjoy these creamy ones. They are pleasantly and surprisingly good.
Don't wait too long to tell someone you love them.

I'm thinking about something easy - maybe Tangerine Beef, rice, and some stir fried veggies. Yup sounds good.
You only live once . . . but if you do it right once should be enough!

Tangerine Beef
This is one of my favorite takeout dishes - it's sweet and hot; I've had this with both beef and chicken (for tangerine chicken or shrimp, use chicken broth instead of beef).

SERVES 3 -4
1 lb flank steaks
4 tablespoons soy sauce
3 tablespoons sherry wine
1/2 teaspoon pepper
1 egg yolk
1 tablespoon sesame oil
2 tangerines
1/2 cup cornstarch, plus
3 tablespoons cornstarch
6 dried red chilies
2 tablespoons minced onions
2 tablespoons orange juice (or juice from the tangerines)
4 tablespoons beef broth
3 tablespoons sugar

1. Slice steak against grain and pound with tenderizer.
2. Combine 1 tbs soy sauce, 1 tbs sherry, pepper, egg yolk, and sesame oil; marinate beef in mixture.
3. Peel tangarines; boil peel and shred.
4. Coat the beef with cornstarch.
5. Heat oil in a wok and brown beef.
6. Remove the beef; add the chilis to the hot oil and stir-fry.
7. Add tangerine peel and onion and stir-fry.
8. Add remaining soy sauce, sherry, orange juice, and beef broth and bring to a boil.
9. Add sugar and stir until caramelized.
10. Add beef and stir to coat.

You only live once . . . but if you do it right once should be enough!
