Huli Huli Chicken - Help Please
#4
  Re: (...)
I'm such a pest! I can't find the latest C@H issue - it's disappeared into thin air. I was planning on making the Huli Huli Chicken anyway because I could have SWORN someone took the time to type out the recipe here. In any event, I can't find it here online either.

Does anyone know which thread I'm thinking of or did I just dream up the whole thing? Thank you.

I think Sonja wrote about it, but the recipe wasn't posted. Here it is. Do you need the salad or coconut-lime rice recipes that go with it?

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/4 cup pineapple juice
1/4 cup fresh lime juice
1/4 cup dark brown sugar
2 tablespoons ketchup
2 tablespoons soy sauce -- dark
1 tablespoon garlic -- minced
1 tablespoon fresh ginger -- minced
1 tablespoon vegetable oil
salt and pepper -- to taste
4 pieces chicken drumsticks

Whisk all ingredients together (except chicken) in a bowl.

Marinate drumsticks in half the pineapple juice mixture in a large
resealable plastic bag for 1 hour, refrigerated. Reduce remaining mixture
in a saucepan over medium-high heat until thickened, 5 minutes; set aside
for basting.

Preheat grill to high. When hot, turn off 1 burner, leaving the other
lit. Remove drumsticks from marinade and arrange on the unlit portion of
the grill. Cook chicken to an internal temperature of 165 degrees, about
40 minutes. Baste with reserved glaze every 10 minutes and turn after 20
mintues.
