I have a coffee/cinnamon rub that I love on chicken thighs - tried it marinating the thighs overnight and smoking yesterday. Man, are they good! I pulled them from the smoker with apple chunks(in the afternoon) at about 145 F. and finished them on the grill for dinner.

A friend some of you know, June Jacobs changed my marinade to a dry rub for her sommelier's thesis (which she passed!!) and that's what I used. It's wonderful.

Here's the marinade -

Cinnamon-Coffee Rub

1 T. ground cinnamon
1/3 cup brown sugar
2 T. coffee (liquid coffee)
2 cloves garlic -- minced

Mix the above and rub on chicken pcs. Let marinate in frig for 3 hours or overnite.

June added the cocoa powder which is wonderful!

Cinnamon-Coffee Rub
1 tablespoon ground Saigon cinnamon
1/4 cup dark brown sugar
2 teaspoons instant espresso powder
2 teaspoons cocoa powder (not Dutch process)
2 cloves garlic -- very finely chopped


Mix all the rub ingredients together. Slide your hand under the skin of the breast, taking care not to make holes in the skin. Loosen the filament all the way down to (and including) the legs. Take handfuls of the rub and massage the chicken under the skin.

Just might have to try this! Sounds really yummy and Jennifer will eat it!!!
