Nothing like waiting til the last minute!! I tested this recipe this a.m. for Saturdays shower and it's wonderful. I didn't worry about it, 'cause you can do so much with tuna, figured I could just play if it didn't work out. But, this is a keeper. Will be great on buffet tables and has been added to the catering menu.

Tuna-Apple Filling

1/4 cup mayonnaise
2 T. finely chopped parsley
1 T. lemon juice
1/2 tsp. salt
3-oz. pkg. cream cheese, softened
12 1/2 – 13-oz. can tuna in oil, drained
1 large red or green eating apple, finely chopped (I used G. Smith)

About 30 minutes before serving or up to 4 days ahead (I question the 4 days):
In medium bowl with fork, mix mayonnaise, parsley, lemon juice, salt, and softened cream cheese until smooth.

Stir in tuna and finely chopped apple until well blended. Cove bowl and refrigerate tuna mixture to use up within 4 days.

Makes about 3 cups of filling, enough for 6 sandwiches.
